  • 1 lb lean ground turkey
  • 2 cups fresh spinach, chopped
  • 1 cup Fontina cheese, shredded
  • 1 cup Italian-seasoned breadcrumbs
  • 2 large eggs
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried thyme

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, sauté diced onion and minced garlic until translucent, about 3-5 minutes.
  3. In a large bowl, combine ground turkey, sautéed onion and garlic, breadcrumbs, eggs, chopped spinach, thyme, salt, pepper, and half of the Fontina cheese. Mix gently until just combined.
  4. Shape half of the turkey mixture into a rectangular loaf on a parchment-lined baking sheet. Create a well in the center and fill with remaining Fontina cheese before covering it with the rest of the turkey mixture.
  5. Bake for 50-60 minutes or until the internal temperature reaches 165°F (74°C) and top is golden brown.
  6. Let it rest for about 10 minutes before slicing.
