  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz fettuccine or penne pasta
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 tsp crushed red pepper flakes (adjust to taste)
  • ½ cup freshly grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente, about 8-10 minutes. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Season the chicken with salt and pepper, then cook until browned and cooked through, about 6-7 minutes per side.
  3. Add minced garlic during the last minute of cooking.
  4. Pour in heavy cream and stir. Add red pepper flakes and simmer for about 3 minutes.
  5. Stir in spinach until wilted, then mix in Parmesan cheese until creamy.
  6. Combine the cooked pasta with the sauce and serve hot with extra Parmesan.
