Scale
  • 4 cups all-purpose flour
  • 2 ¼ tsp active dry yeast (1 packet)
  • 1 ½ cups warm water (110°F)
  • 2 tsp salt
  • 1 tbsp sugar
  • 2 medium sweet yellow onions, sliced
  • 2 cups grated cheese (Cheddar or Gruyère)
  • 3 tbsp unsalted butter, melted (for brushing)

Instructions

  1. In a large bowl, combine warm water, sugar, and yeast. Let sit for about 5 minutes until frothy.
  2. Gradually stir in flour and salt to form a sticky dough.
  3. Knead on a floured surface for about 10 minutes until smooth and elastic.
  4. Place dough in an oiled bowl, cover, and let rise in a warm spot until doubled in size (about 1 hour).
  5. Meanwhile, caramelize onions in melted butter over medium heat for 15-20 minutes until golden brown.
  6. Punch down the risen dough and fold in caramelized onions and grated cheese until evenly combined.
  7. Shape into a loaf or rolls, place on a parchment-lined baking sheet, cover, and let rise for another 30 minutes.
  8. Brush with melted butter and bake at 375°F (190°C) for 25-30 minutes until golden brown.
