Ingredients
Scale
- 8 oz fettuccine pasta
- 4 oz high-quality smoked salmon, cut into pieces
- 4 oz cream cheese
- 2 tbsp fresh dill, chopped (or 1 tbsp dried dill)
- 2 tbsp freshly squeezed lemon juice
- 2 tbsp capers
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt, to taste
Instructions
- 1. Bring a large pot of salted water to boil. Add fettuccine and cook until al dente according to package instructions (about 8-10 minutes). Reserve some pasta water before draining.
- 2. While the pasta cooks, heat olive oil in a skillet over medium heat. Sauté minced garlic until fragrant (about 1 minute).
- 3. Reduce heat to low and add cream cheese to the skillet, stirring until melted and smooth. Slowly incorporate lemon juice while stirring.
- 4. Fold in smoked salmon and chopped dill gently until combined.
- 5. Toss the drained pasta into the skillet with the sauce. Stir well to coat all strands, adding reserved pasta water gradually until desired consistency is achieved.
- 6. Top with capers and give it one last gentle toss before serving.
