  • 2 tbsp taco seasoning
  • 1 cup salsa
  • 1 can (15 oz) black beans, rinsed
  • 1 cup bell peppers, diced
  • 1 cup corn (fresh or frozen)
  • 2 cups shredded cheese (cheddar & Monterey Jack blend)
  • 1 cup crushed tortilla chips
  • ½ cup sour cream (optional)

Instructions

  1. Prepare your ingredients by dicing the bell peppers and measuring out all components.
  2. In a skillet over medium heat, brown the ground beef for about 5-7 minutes; drain excess fat and stir in taco seasoning.
  3. Layer half of the browned beef in the slow cooker followed by half of the salsa, black beans, corn, bell peppers, and shredded cheese.
  4. Repeat layering with the remaining ingredients.
  5. Cover and cook on low for 4-6 hours until heated through.
  6. About 30 minutes before serving, sprinkle crushed tortilla chips on top to add crunch.
