Ingredients
- 2 lbs boneless pork shoulder
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 medium sweet onion, chopped
- 4 cloves garlic, minced
- 2 tbsp chili powder
- 1 tsp ground cumin
- 2 bell peppers (any color), chopped
- 2 cups low-sodium beef broth
- Juice of 1 lime
Instructions
- Chop onions, bell peppers, and garlic.
- Sear the pork shoulder in a skillet over medium-high heat until golden brown (optional).
- Place the pork (seared or raw) in the slow cooker. Add onions, garlic, bell peppers, tomatoes, beans, broth, chili powder, cumin, and stir well.
- Cover and cook on low for 8 hours or high for 4 hours.
- About 30 minutes before serving, taste the chili and adjust seasonings as needed.
- Just before serving, add fresh lime juice for a zesty touch.
