  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 cup bell peppers, diced (any color)
  • 2 tbsp taco seasoning
  • 4 cups low-sodium chicken broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • Juice of 1 lime

Instructions

  1. Prep your ingredients by dicing the onion and bell peppers while rinsing the black beans.
  2. In a large pot over medium heat, add a drizzle of olive oil. Sauté the onions and garlic until translucent, about 3 minutes.
