  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, room temperature
  • 4 large eggs, room temperature
  • 1 cup dark rum (plus more for glaze)
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter
  • 1/4 cup water

Instructions

  1. Preheat oven to 325°F (160°C). Grease and flour a bundt pan.
  2. In a bowl, whisk together flour and baking powder.
  3. In a separate bowl, cream butter and sugar until light and fluffy. Add eggs one at a time.
  4. Gradually add dry ingredients to wet mixture, alternating with dark rum until just combined.
  5. Pour batter into the prepared bundt pan and smooth the top.
  6. Bake for 50-60 minutes until a toothpick comes out clean.
  7. For the glaze, combine brown sugar, butter, dark rum, and water in a saucepan over medium heat until dissolved. Simmer for 5 minutes.
  8. After baking, poke holes in the warm cake and pour half of the glaze over it.
  9. Cool in the pan for 10 minutes before transferring to a cooling rack and drizzling with remaining glaze.
