  • 2 large eggs

  • 1 tsp vanilla extract
  • ½ cup whole milk
  • ½ cup melted butter

Instructions

  2. In a large bowl, whisk together flour, sugars, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix pumpkin puree, eggs, melted butter, milk, and vanilla until smooth.
  4. Gently fold the wet ingredients into the dry ingredients until just combined.
  5. If using cream cheese, drop spoonfuls into the batter before folding gently.
  6. Fill muffin tins about two-thirds full with batter and bake for 20-25 minutes or until a toothpick comes out clean.
