- 100g unsalted butter (melted)
- 250g mascarpone cheese
- 400ml heavy cream (cold)
- 397g sweetened condensed milk
- 2 ripe bananas (sliced)
- Cocoa powder (optional)
Instructions
- Crush the digestive biscuits into fine crumbs and mix with melted butter until well combined.
- Press the mixture into the bottom of a springform pan to form a crust. Chill in the fridge.
- In a bowl, beat the mascarpone cheese until smooth, then add heavy cream gradually while mixing until soft peaks form.
- Fold in sweetened condensed milk until thick and creamy.
- Layer sliced bananas over the chilled crust, then pour half of the cheesecake filling on top. Repeat with remaining bananas and filling.
