  • 4 cups green cabbage, shredded
  • 1 cup brown rice
  • 1 tbsp fresh ginger, grated
  • 4 cloves garlic, minced
  • ¼ cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch

Instructions

  1. Rinse the brown rice under cold water and cook according to package instructions.
  2. Heat oil in a large skillet over medium heat. Add shredded cabbage and stir-fry until tender yet crisp (about 5 minutes).
  3. Add sliced beef to the skillet and sear until browned on all sides (3-4 minutes).
  4. In a bowl, whisk together soy sauce, brown sugar, sesame oil, rice vinegar, garlic, ginger, and cornstarch until smooth.
  5. Pour the sauce over the beef and cabbage in the skillet. Stir well and simmer for another 2-3 minutes until thickened.
