- 1 cup granulated sugar
- 1/2 cup unsalted butter (softened)
- 2 large eggs
- 1/2 cup all-purpose flour
- 1 tsp baking powder
- 2 tsp pure mint extract
- 1 cup powdered sugar (for frosting)
- Green food coloring (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking pan.
- In a bowl, whisk together cocoa powder, flour, baking powder, and a pinch of salt.
- In another bowl, cream together softened butter and granulated sugar until fluffy. Add eggs one at a time, mixing well after each addition, then stir in mint extract.
- Gradually fold the dry mixture into the wet ingredients until just combined.
- Pour batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out with moist crumbs.
- While cooling, prepare the frosting by mixing powdered sugar with softened butter and adding milk to desired consistency. Optionally mix in vanilla extract and food coloring.
- Once brownies are cooled, frost generously, cut into squares, and serve.
