Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 2 tsp pure mint extract
  • 1 cup powdered sugar (for frosting)
  • Green food coloring (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a bowl, whisk together cocoa powder, flour, baking powder, and a pinch of salt.
  3. In another bowl, cream together softened butter and granulated sugar until fluffy. Add eggs one at a time, mixing well after each addition, then stir in mint extract.
  4. Gradually fold the dry mixture into the wet ingredients until just combined.
  5. Pour batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out with moist crumbs.
  6. While cooling, prepare the frosting by mixing powdered sugar with softened butter and adding milk to desired consistency. Optionally mix in vanilla extract and food coloring.
  7. Once brownies are cooled, frost generously, cut into squares, and serve.
