Description

Ingredients

  • 1 sheet puff pastry (thawed)
  • 4 large eggs
  • 1 cup heavy cream (or milk)
  • 1 cup grated cheese (cheddar or Swiss)
  • 1/2 cup chopped vegetables (spinach, bell peppers, onions)
  • 1/2 cup cooked bacon or ham (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Roll out puff pastry on a floured surface to about 1/8 inch thick. Cut circles to fit muffin tin.
  3. Grease the muffin tin with nonstick spray and place pastry circles into each cup.
  4. In a bowl, whisk together eggs and cream until combined. Stir in cheese, veggies, bacon or ham (if using), and season with salt and pepper.
  5. Pour the egg mixture into each pastry cup until full but not overflowing.
  6. Bake for 20-25 minutes until golden brown and set in the center.
  7. Let cool slightly before serving warm.
