- 4 cloves fresh garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 6 cups low-sodium chicken broth

- 1 tsp dried rosemary
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Preheat a large pot over medium heat and add a splash of olive oil.
- Sauté minced garlic until fragrant, about 3-4 minutes.
- Add diced carrots and celery; cook until slightly softened, approximately 5 minutes.
- Place chicken breasts in the pot and pour in enough chicken broth to cover them completely. Bring to a gentle boil.
- Season with thyme, rosemary, salt, and pepper. Allow to simmer on low for 25-30 minutes until chicken is cooked through.
- Remove chicken from the pot, shred it with forks, then return to the pot along with heavy cream. Stir well and serve hot.
