Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat a large pot over medium heat and add a splash of olive oil.
  2. Sauté minced garlic until fragrant, about 3-4 minutes.
  3. Add diced carrots and celery; cook until slightly softened, approximately 5 minutes.
  4. Place chicken breasts in the pot and pour in enough chicken broth to cover them completely. Bring to a gentle boil.
  5. Season with thyme, rosemary, salt, and pepper. Allow to simmer on low for 25-30 minutes until chicken is cooked through.
  6. Remove chicken from the pot, shred it with forks, then return to the pot along with heavy cream. Stir well and serve hot.
