Instructions
- Preheat your oven to 400°F (200°C).
- Peel and cube the sweet potatoes into uniform pieces (approximately 1 inch).
- In a small saucepan over low heat, melt the butter or coconut oil until liquid.
- In a large mixing bowl, combine melted butter/coconut oil, maple syrup, cinnamon, salt, and pepper. Stir until well-blended.

- Spread coated sweet potatoes on a parchment-lined baking sheet and roast for 25-30 minutes, flipping halfway through, until fork-tender and caramelized.
