  • 3 tablespoons butter or coconut oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes into uniform pieces (approximately 1 inch).
  3. In a small saucepan over low heat, melt the butter or coconut oil until liquid.
  4. In a large mixing bowl, combine melted butter/coconut oil, maple syrup, cinnamon, salt, and pepper. Stir until well-blended.
  5. Add the cubed sweet potatoes to the bowl and toss until evenly coated.
  6. Spread coated sweet potatoes on a parchment-lined baking sheet and roast for 25-30 minutes, flipping halfway through, until fork-tender and caramelized.
