This comforting dish is perfect for family dinners or game day celebrations. Each bite offers a burst of flavor topped with fresh green onions and a dollop of sour cream, making it a crowd-pleaser that will have everyone coming back for more.

Ingredients

Scale
  • 4 large Russet potatoes (about 2 lbs)
  • 1 lb sirloin or ribeye steak
  • 1 cup shredded sharp cheddar cheese
  • 4 green onions, sliced
  • 1 cup sour cream
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Scrub the russet potatoes clean and poke holes in each with a fork. Rub with olive oil and sprinkle with salt. Place directly on the oven rack and bake for 45-60 minutes until tender.
  3. While the potatoes bake, heat a skillet over medium-high heat and add olive oil. Season the steak with salt and pepper, cooking for about 4-5 minutes per side until medium-rare. Let rest before slicing into bite-sized pieces.
  4. Remove baked potatoes from the oven, slice them open lengthwise, and fluff the insides with a fork. Top generously with cheddar cheese to melt.
  5. Serve by adding sliced steak, green onions, and a dollop of sour cream on top.
