- 1 whole chicken (4–5 lbs)
- 2 fresh lemons
- 6 garlic cloves, minced
- 4 sprigs fresh thyme
- 4 sprigs fresh rosemary
- ¼ cup extra virgin olive oil
- Salt and pepper to taste
- 2 cups carrots, chopped (optional)
- 2 cups potatoes, chopped (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the chicken under cold water and pat it dry.
- In a bowl, mix the minced garlic, chopped thyme, rosemary leaves, olive oil, salt, and pepper to create an herb paste.
- Rub the herb mixture all over the chicken, including inside the cavity. Squeeze juice from one lemon into the cavity for added flavor.
- If using carrots and potatoes, arrange them around the chicken in the roasting pan.
- Roast the chicken for about 1 hour and 15 minutes or until it reaches an internal temperature of 165°F (75°C), basting halfway through.
- Let it rest for at least 10 minutes before carving.
