Description

Lemon Herb Roasted Chicken is a succulent delight, bursting with zesty lemon and aromatic herbs, perfect for any gathering or cozy dinner at home.


Ingredients

  • 1 whole chicken (45 lbs)
  • 2 fresh lemons
  • 6 garlic cloves, minced
  • 4 sprigs fresh thyme
  • 4 sprigs fresh rosemary
  • ¼ cup extra virgin olive oil
  • Salt and pepper to taste
  • 2 cups carrots, chopped (optional)
  • 2 cups potatoes, chopped (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken under cold water and pat it dry.
  3. In a bowl, mix the minced garlic, chopped thyme, rosemary leaves, olive oil, salt, and pepper to create an herb paste.
  4. Rub the herb mixture all over the chicken, including inside the cavity. Squeeze juice from one lemon into the cavity for added flavor.
  5. If using carrots and potatoes, arrange them around the chicken in the roasting pan.
  6. Roast the chicken for about 1 hour and 15 minutes or until it reaches an internal temperature of 165°F (75°C), basting halfway through.
  7. Let it rest for at least 10 minutes before carving.
