  • 1/2 cup granulated sugar

  • Zest of 1 lemon
  • 2 tbsp freshly squeezed lemon juice

  • 4 oz cream cheese (softened)
  • 1/2 cup powdered sugar
  • Turbinado sugar for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, cream together softened butter and granulated sugar until light and fluffy. Add the egg and mix well.
  3. Stir in lemon zest, lemon juice, and vanilla extract. Gradually add flour until just combined.
  4. Drop rounded tablespoons of dough onto prepared sheets, spacing them two inches apart.
  5. Bake for 10–12 minutes until edges are golden but centers remain soft.
  6. While cooling, whip cream cheese with powdered sugar until smooth, then fold in lemon curd.
  7. Once cookies are cool, fill each center with the lemon curd mixture and sprinkle with turbinado sugar. Use a kitchen torch to caramelize the tops until golden brown.
