Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Season chicken breasts with salt, pepper, and garlic powder. Drizzle with olive oil.
- Halve baby potatoes and toss them in olive oil, salt, and pepper.
- Trim tough ends from broccolini and add to the baking sheet with potatoes; squeeze half a lemon over everything.
- Roast for 25-30 minutes or until chicken is golden brown and potatoes are fork-tender.
- Remove from oven and drizzle more lemon juice before serving.
