  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 lb fresh broccolini
  • 1 lb baby potatoes
  • 2 tbsp freshly squeezed lemon juice
  • 2 tsp garlic powder
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Season chicken breasts with salt, pepper, and garlic powder. Drizzle with olive oil.
  3. Halve baby potatoes and toss them in olive oil, salt, and pepper.
  4. Trim tough ends from broccolini and add to the baking sheet with potatoes; squeeze half a lemon over everything.
  5. Roast for 25-30 minutes or until chicken is golden brown and potatoes are fork-tender.
  6. Remove from oven and drizzle more lemon juice before serving.
