Ingredients

Scale
  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1/2 cup fresh key lime juice (about 56 limes)
  • Zest of 2 key limes
  • 2 large eggs
  • 1 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). In a medium bowl, mix graham cracker crumbs and melted butter until combined. Press into a greased baking dish.
  2. Bake for 10 minutes until lightly golden. Let cool.
  3. In another bowl, whisk together sugar and lime juice, then add eggs one at a time until well mixed. Pour over the cooled crust.
  4. Bake for an additional 15-20 minutes until set but slightly jiggly in the center. Let cool completely at room temperature, then refrigerate for at least two hours.
  5. Whip heavy cream until soft peaks form, then spread or pipe onto chilled bars. Garnish with lime zest if desired.
