- 2 bell peppers, diced (any color)

- 1 pound ground beef or turkey
- 1 can (14.5 oz) diced tomatoes with juice
- 4 cups low-sodium vegetable broth
- 1 cup pre-cooked brown rice
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
Instructions
- Set the Instant Pot to sauté mode and heat the olive oil. Add chopped onions and bell peppers. Sauté until softened, about 5 minutes.
- Stir in the ground beef or turkey and cook until browned, breaking it apart as it cooks. Season with salt and pepper.
- Add minced garlic and cook for an additional 30 seconds until fragrant.
- Pour in diced tomatoes with their juices, vegetable broth, and pre-cooked brown rice. Stir well to combine.
- Seal the lid of the Instant Pot and set it to high pressure for 10 minutes. Allow natural release for 5 minutes before manually releasing any remaining pressure.
- Open the lid carefully and serve hot, garnished with fresh herbs if desired.
