  • 2 cups low-sodium vegetable broth
  • 1 medium onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper (adjust to taste)
  • 1 tsp smoked paprika
  • 2 tbsp apple cider vinegar

Instructions

  1. Set the Instant Pot to sauté mode and heat olive oil. Add sliced onions and cook until translucent (about 5 minutes).
  2. Stir in minced garlic, salt, pepper, and smoked paprika; sauté for another minute until fragrant.
  3. Layer the chopped cabbage on top of the aromatics and pour vegetable broth over it without stirring.
  4. Secure the lid and set to manual high pressure for 5 minutes.
  5. Perform a quick release carefully. After opening the lid, drizzle with apple cider vinegar and stir gently before serving.
