  • 4 sheets nori
  • 1 ripe avocado, sliced
  • 1/2 cucumber, sliced into thin strips
  • 8 ounces imitation crab meat
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • Low-sodium soy sauce for dipping
  • Toasted sesame seeds for garnish

Instructions

  1. Rinse sushi rice under cold water until clear. Cook according to package instructions or in a rice cooker.
  2. In a bowl, mix warm cooked rice with rice vinegar, sugar, and salt until combined.
  3. Cut avocado and cucumber into thin strips.
  4. Lay a nori sheet on a bamboo mat, spread sushi rice evenly over it, leaving an inch at the top.
  5. Place avocado, cucumber, and crab in the center of the rice.
  6. Roll tightly using the mat; seal the edge with a bit of water.
