- 2 large fresh lemons (juiced)
- 3 garlic cloves (minced)
- 1 yellow onion (chopped)
- 2 medium carrots (diced)
- 2 celery stalks (chopped)
- 6 cups low-sodium chicken broth
- 1 tsp dried oregano
- 2 tbsp extra virgin olive oil
- Fresh parsley or dill (for garnish)
Instructions
- Chop the chicken into bite-sized pieces and dice the onion, carrots, and celery. Squeeze the lemons for juice.
- In a large pot over medium heat, drizzle olive oil and add chopped onions. Cook for about 5 minutes until translucent. Add garlic and sauté until fragrant.
- Stir in chicken pieces and cook until golden brown on all sides, about 7 minutes.
- Add chicken broth along with diced carrots and celery. Simmer on low heat for around 20 minutes.
- Stir in lemon juice and oregano during the last few minutes of cooking. Season with salt and pepper to taste.
