  • 2 boneless, skinless chicken breasts (about 1 pound)
  • 2 large fresh lemons (juiced)
  • 3 garlic cloves (minced)
  • 1 yellow onion (chopped)
  • 2 medium carrots (diced)
  • 2 celery stalks (chopped)
  • 6 cups low-sodium chicken broth
  • 1 tsp dried oregano
  • 2 tbsp extra virgin olive oil
  • Fresh parsley or dill (for garnish)

Instructions

  1. Chop the chicken into bite-sized pieces and dice the onion, carrots, and celery. Squeeze the lemons for juice.
  2. In a large pot over medium heat, drizzle olive oil and add chopped onions. Cook for about 5 minutes until translucent. Add garlic and sauté until fragrant.
  3. Stir in chicken pieces and cook until golden brown on all sides, about 7 minutes.
  4. Add chicken broth along with diced carrots and celery. Simmer on low heat for around 20 minutes.
  5. Stir in lemon juice and oregano during the last few minutes of cooking. Season with salt and pepper to taste.
  6. Serve hot, garnished with freshly chopped parsley or dill.
