  • ½ cup brown sugar
  • 3 large eggs (room temperature)
  • 1 cup buttermilk (room temperature)
  • ½ cup unsalted butter (softened)
  • 1 cup sweetened coconut flakes
  • 1 cup toasted pecans (chopped)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare three 9-inch round cake pans by greasing and flouring them.
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream the softened butter with granulated and brown sugar until light and fluffy.
  4. Gradually add eggs one at a time to the butter mixture, then mix in the buttermilk until well combined.
  5. Slowly fold in the dry ingredients until just combined. Divide the batter across the prepared pans.
  6. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  7. For the frosting, combine coconut flakes, chopped pecans, sugar, evaporated milk, and egg yolks in a saucepan over medium heat. Stir constantly until thickened.
  8. Allow cakes to cool completely before frosting layers generously with the coconut-pecan mixture.
