- 1 cup sweetened coconut flakes
- 1 cup toasted pecans (chopped)
Instructions
- Preheat your oven to 350°F (175°C) and prepare three 9-inch round cake pans by greasing and flouring them.
- In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In another bowl, cream the softened butter with granulated and brown sugar until light and fluffy.
- Gradually add eggs one at a time to the butter mixture, then mix in the buttermilk until well combined.
- Slowly fold in the dry ingredients until just combined. Divide the batter across the prepared pans.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean.
- For the frosting, combine coconut flakes, chopped pecans, sugar, evaporated milk, and egg yolks in a saucepan over medium heat. Stir constantly until thickened.
- Allow cakes to cool completely before frosting layers generously with the coconut-pecan mixture.
