- 2 pounds Yukon Gold potatoes, thinly sliced
- 2 large sweet onions (e.g., Vidalia), sliced
- 4 tablespoons unsalted butter
- 1 cup heavy cream
- 1 cup shredded Gruyère cheese
- 1 cup shredded mozzarella cheese
- 1 tablespoon fresh thyme leaves
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
- In a skillet over medium heat, melt the butter. Sauté the sliced onions with salt until soft and golden brown, about 15 minutes.
- In a bowl, mix together heavy cream, thyme, salt, and pepper until smooth.
- Layer half of the potato slices in the prepared baking dish. Pour half of the cream mixture over them, followed by half of the sautéed onions and half of the cheeses. Repeat with remaining ingredients.
- Bake uncovered for 45-50 minutes until potatoes are tender and cheese is bubbly and golden brown.
