  • 8 oz Greek feta cheese, crumbled
  • 8 oz cream cheese, softened
  • 1/2 cup fresh herbs (basil, dill, or your choice), chopped
  • 1/4 cup honey
  • 1/4 cup extra virgin olive oil
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • Juice of 1 lemon

Instructions

  1. Preheat oven to 350°F (175°C) and grease a springform pan.
  2. For the crust: Combine graham cracker crumbs and melted butter until it resembles wet sand. Press firmly into the bottom of the pan.
  3. For the filling: Beat cream cheese and feta together until smooth. Mix in lemon juice.
  4. Fold in chopped herbs and honey until well combined.
  5. Pour filling over the prepared crust and smooth the top.
  6. Bake for 25-30 minutes until slightly jiggly in the center. Let cool at room temperature, then refrigerate for at least four hours or overnight.
