  • 34 boneless, skinless chicken breasts
  • 28 oz canned crushed tomatoes
  • 2 tbsp Italian seasoning
  • 4 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 8 oz pasta (penne recommended)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your slow cooker by setting it to low heat.
  2. In a skillet, heat olive oil and sauté minced garlic until fragrant.
  3. Place chicken in the slow cooker and pour crushed tomatoes over it. Sprinkle with Italian seasoning, salt, and pepper; stir gently.
  4. Cover and let simmer on low for 6-8 hours until chicken shreds easily.
  5. Cook pasta according to package directions until al dente; drain.
  6. Shred chicken in the slow cooker, mix in half of the Parmesan cheese, and serve over pasta, garnishing with remaining cheese.
