- 4 cloves fresh garlic, minced
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup long-grain white rice
- 2 tsp cumin
- 2 tsp smoked paprika
- Juice of 2 limes
- 1 cup bell peppers, diced (red or yellow)
- ¼ cup fresh cilantro, chopped
- 2 tbsp extra virgin olive oil
Instructions
- Marinate the chicken by combining olive oil, lime juice, minced garlic, cumin, and paprika in a bowl. Add chicken and let it soak for at least 30 minutes.
