Ingredients
- 2 cups short-grain sushi rice
- 4 sheets nori
- 8 oz sushi-grade fresh fish (e.g., tuna or salmon)
- 1 medium cucumber (sliced into thin strips)
- 1 ripe avocado (sliced)
- 1 cup panko breadcrumbs
- 3 tbsp mayonnaise
- 1 tbsp sriracha
Instructions
- Rinse sushi rice under cold water until clear, then cook according to package instructions. Once cooked, season with rice vinegar, sugar, and salt while warm.
- While the rice cools, slice cucumber and avocado, and cut the fish into long strips.
- Place a nori sheet shiny side down on a bamboo mat. Spread an even layer of cooled sushi rice over the nori, leaving an inch at the top edge.
- Lay fish, cucumber, and avocado across the center of the rice-covered nori.
- Starting from the bottom edge, tightly roll up using the bamboo mat until reaching the bare edge; wet it to seal.
- Coat the roll with panko breadcrumbs and fry in heated oil over medium heat until golden brown (about 1-2 minutes per side).
- Slice into bite-sized pieces and drizzle with spicy mayo before serving.
