  • 2 cups short-grain sushi rice
  • 4 sheets nori
  • 8 oz sushi-grade fresh fish (e.g., tuna or salmon)
  • 1 medium cucumber (sliced into thin strips)
  • 1 ripe avocado (sliced)
  • 1 cup panko breadcrumbs
  • 3 tbsp mayonnaise
  • 1 tbsp sriracha

Instructions

  1. Rinse sushi rice under cold water until clear, then cook according to package instructions. Once cooked, season with rice vinegar, sugar, and salt while warm.
  2. While the rice cools, slice cucumber and avocado, and cut the fish into long strips.
  3. Place a nori sheet shiny side down on a bamboo mat. Spread an even layer of cooled sushi rice over the nori, leaving an inch at the top edge.
  4. Lay fish, cucumber, and avocado across the center of the rice-covered nori.
  5. Starting from the bottom edge, tightly roll up using the bamboo mat until reaching the bare edge; wet it to seal.
  6. Coat the roll with panko breadcrumbs and fry in heated oil over medium heat until golden brown (about 1-2 minutes per side).
  7. Slice into bite-sized pieces and drizzle with spicy mayo before serving.
