- 2 medium sweet onions, chopped
- 4 cloves garlic, minced
- 1/2 cup breadcrumbs (plain or Italian)
- 1 cup beef broth (low sodium)
- 1 tsp dried thyme
- 2 bay leaves
- 1/4 cup grated Parmesan cheese
- 1 tbsp soy sauce
- Salt and pepper to taste
Instructions
- Sauté chopped onions in a skillet until golden brown (about 10 minutes). Set aside.
- In a large bowl, mix ground beef, breadcrumbs, minced garlic, Parmesan cheese, thyme, salt, and pepper until just combined.
- Form mixture into golf-sized meatballs.
- Layer half of the cooked onions in the crockpot. Add meatballs on top and pour in beef broth mixed with soy sauce. Top with remaining onions and bay leaves.
