  • 1 lb ground turkey (93% lean)
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 1 cup fresh cranberries
  • 2 tbsp brown sugar
  • 1 small onion, finely chopped
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup ketchup

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté onions in a skillet over medium heat for about 5 minutes until translucent.
  3. In a large bowl, mix ground turkey, sautéed onions, breadcrumbs, eggs, garlic powder, salt, pepper, and half the ketchup until well combined.
  4. Shape the mixture into a loaf on a baking sheet or in a loaf pan.
  5. For the glaze, cook cranberries, brown sugar, and remaining ketchup in a saucepan over medium heat until cranberries burst (about 10 minutes).
  6. Pour half the glaze over the meatloaf and bake for 50-60 minutes until the internal temperature reaches 165°F (75°C). Serve with remaining glaze.
