  • 1 cup sour cream (full-fat)
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup brown sugar (for swirling)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a bundt pan with butter or nonstick spray.
  2. In a bowl, whisk together flour, baking powder, cinnamon, and salt.
  3. In another bowl, cream together softened butter and granulated sugar until light and fluffy (about 3-5 minutes).
  4. Beat in eggs one at a time, then add sour cream and vanilla extract.
  5. Gradually mix dry ingredients into the wet mixture until just combined.
  6. In a small bowl, combine brown sugar with additional cinnamon for the swirl.
  7. Pour half of the batter into the bundt pan, sprinkle half of the cinnamon-sugar mixture over it, then add the remaining batter followed by the remaining cinnamon-sugar mixture on top.
  8. Bake for 45-50 minutes or until a toothpick comes out clean.
  9. Allow to cool in the pan for 10 minutes before transferring to a wire rack; dust with powdered sugar if desired.
