Description

  • 2 medium zucchinis, grated (about 2 cups)
  • 1 ½ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • ½ cup vegetable oil or melted butter
  • 2 tsp vanilla extract
  • ½ cup chocolate chips (Optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
  2. Grate the zucchinis and set aside.
  3. In a bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  4. In another bowl, beat together sugar, eggs, oil, and vanilla until smooth.
  5. Fold the dry ingredients into the wet mixture until just combined. Gently mix in the zucchini and chocolate chips if using.
  6. Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
  7. Allow to cool for 10 minutes before transferring to a wire rack.
