  • 1 cup heavy cream

  • 6 oz dark chocolate (for ganache)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a saucepan, combine water, butter, sugar, and salt over medium heat until boiling. Stir in flour until it forms a ball.
  3. Remove from heat and let cool slightly before adding eggs one at a time, mixing until glossy.
  4. Pipe 4-inch lines on parchment-lined baking sheets; space them well.
  5. Bake for 20-25 minutes until puffed and golden brown; do not open the oven door during baking.
  6. For the filling, whip the heavy cream with vanilla extract until soft peaks form, then fold in cocoa powder.
  7. Once cooled, make a slit in each éclair and fill with whipped cream using a piping bag.
  8. For the ganache topping, melt dark chocolate with warm heavy cream until smooth; dip tops of éclairs into ganache.
