  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup full-fat Greek yogurt
  • 4 cloves fresh garlic, minced
  • Juice of 2 lemons
  • 3 tbsp extra virgin olive oil
  • 1 cucumber, diced
  • 2 cups cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 4 warm pita bread triangles
  • Fresh herbs (parsley or dill) for garnish

Instructions

  1. In a large bowl, combine Greek yogurt, minced garlic, lemon juice, olive oil, salt, and pepper. Add the chicken breasts and coat well. Marinate for at least 30 minutes.
  2. Heat a grill pan over medium-high heat. Cook the marinated chicken for about 6-7 minutes per side until golden brown and cooked through.
  3. Mix together Greek yogurt, grated cucumber (squeeze out excess moisture), minced garlic, lemon juice, olive oil, salt, and fresh dill in a bowl until smooth.
  4. Slice the cooked chicken into strips. In bowls or on a large platter, layer rice or quinoa as a base. Top with sliced chicken, diced tomatoes, cucumber slices, red onion rings, and tzatziki sauce.
  5. Garnish with fresh herbs and serve with warm pita bread.
