- 2 cups cherry tomatoes, halved
- 1 small red onion, thinly sliced
- 4 warm pita bread triangles
- Fresh herbs (parsley or dill) for garnish
Instructions
- In a large bowl, combine Greek yogurt, minced garlic, lemon juice, olive oil, salt, and pepper. Add the chicken breasts and coat well. Marinate for at least 30 minutes.
- Heat a grill pan over medium-high heat. Cook the marinated chicken for about 6-7 minutes per side until golden brown and cooked through.
- Mix together Greek yogurt, grated cucumber (squeeze out excess moisture), minced garlic, lemon juice, olive oil, salt, and fresh dill in a bowl until smooth.
- Slice the cooked chicken into strips. In bowls or on a large platter, layer rice or quinoa as a base. Top with sliced chicken, diced tomatoes, cucumber slices, red onion rings, and tzatziki sauce.
