- 3 lbs chuck roast
- 4 dried guajillo chiles
- 2 dried pasilla chiles
- 1 large onion, chopped
- 4 cloves garlic, crushed
- 4 cups low-sodium beef broth
- 2 tsp dried Mexican oregano
- ¼ cup fresh cilantro, chopped (for garnish)
- 12 corn tortillas
- 2 cups Oaxaca or mozzarella cheese, shredded
Instructions
- Prepare the chiles by removing stems and seeds. Toast guajillo and pasilla chiles in a dry skillet until fragrant.
- In a blender, combine toasted chiles with onion, garlic, oregano, and beef broth; blend until smooth.
- Season the chuck roast with salt and pepper; sear on both sides in a large pot over medium-high heat.
- Pour the blended sauce over the seared meat; add more beef broth if needed to cover.
- Cover and simmer on low heat for 3-4 hours until the meat is easily shredded.
- Warm corn tortillas, fill them with shredded beef mixture, top with cheese, and let melt slightly.
- Serve immediately with fresh cilantro and lime wedges.
