  • 3 lbs chuck roast
  • 4 dried guajillo chiles
  • 2 dried pasilla chiles
  • 1 large onion, chopped
  • 4 cloves garlic, crushed
  • 4 cups low-sodium beef broth
  • 2 tsp dried Mexican oregano
  • ¼ cup fresh cilantro, chopped (for garnish)
  • 12 corn tortillas
  • 2 cups Oaxaca or mozzarella cheese, shredded

Instructions

  1. Prepare the chiles by removing stems and seeds. Toast guajillo and pasilla chiles in a dry skillet until fragrant.
  2. In a blender, combine toasted chiles with onion, garlic, oregano, and beef broth; blend until smooth.
  3. Season the chuck roast with salt and pepper; sear on both sides in a large pot over medium-high heat.
  4. Pour the blended sauce over the seared meat; add more beef broth if needed to cover.
  5. Cover and simmer on low heat for 3-4 hours until the meat is easily shredded.
  6. Warm corn tortillas, fill them with shredded beef mixture, top with cheese, and let melt slightly.
  7. Serve immediately with fresh cilantro and lime wedges.
