  • 1 lb birria beef (chuck roast)
  • 4 slices sourdough bread
  • 1 cup mozzarella cheese, shredded
  • 1 cup Oaxaca cheese, shredded
  • 1 cup consomé (homemade or store-bought)
  • ¼ cup fresh cilantro, chopped
  • 2 lime wedges
  • Salt and pepper to taste
  • 2 tbsp butter

Instructions

  1. Season the birria beef with salt and pepper. Sear in a hot skillet until browned on all sides.
  2. Transfer the seared beef to a slow cooker. Add spices (cumin and oregano) and enough beef broth to cover halfway. Cook on low for 6-8 hours until fork-tender.
  3. Shred the cooked beef using two forks.
  4. Assemble the sandwich: Layer one slice of sourdough with shredded birria and both cheeses, then top with another slice.
  5. Heat butter in a skillet over medium heat. Grill the sandwich for 3-4 minutes per side until golden brown.
  6. Serve with warm consomé, garnished with cilantro and lime wedges.
