- 4 slices sourdough bread
- 1 cup mozzarella cheese, shredded
- 1 cup Oaxaca cheese, shredded
- 1 cup consomé (homemade or store-bought)
- ¼ cup fresh cilantro, chopped
- 2 lime wedges
- Salt and pepper to taste
- 2 tbsp butter
Instructions
- Season the birria beef with salt and pepper. Sear in a hot skillet until browned on all sides.
- Transfer the seared beef to a slow cooker. Add spices (cumin and oregano) and enough beef broth to cover halfway. Cook on low for 6-8 hours until fork-tender.
- Shred the cooked beef using two forks.
- Assemble the sandwich: Layer one slice of sourdough with shredded birria and both cheeses, then top with another slice.
- Heat butter in a skillet over medium heat. Grill the sandwich for 3-4 minutes per side until golden brown.
