- 1 medium onion, finely diced
- 3 cloves garlic, minced
- 2 lbs peeled starchy potatoes (like Russet or Yukon Gold)
- 4 tbsp unsalted butter
- ½ cup milk or cream
- Salt and pepper to taste
- Chopped parsley (optional, for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine ground beef, breadcrumbs, diced onion, minced garlic, salt, and pepper. Mix gently until just combined to avoid tough meatballs.
- Shape the mixture into small balls, about 1 inch in diameter. Place them on a parchment-lined baking sheet.
- Heat oil in a skillet over medium-high heat and sear the meatballs until browned on all sides.
- Transfer the meatballs to a baking dish and pour BBQ sauce over them. Bake for 25-30 minutes until cooked through.
- Meanwhile, boil peeled potatoes in salted water until tender (about 15-20 minutes). Drain and return them to the pot.
- Mash hot potatoes while gradually adding butter and milk until smooth and creamy; season with salt and pepper as needed.
