Instructions

  2. In a bowl, mix flour, sugar, baking powder, and salt until combined.
  3. In another bowl, cream the softened butter and sugar until light and fluffy.
  4. Add eggs one at a time along with vanilla extract; mix until smooth.
  5. Gradually fold in dry ingredients alternating with milk until just combined. Gently stir in the chopped pistachios.
  6. Fill each muffin cup two-thirds full and bake for 18-20 minutes or until golden brown. Check doneness with a toothpick.
