Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1 cup high-quality feta cheese, crumbled
  • 3/4 cup granulated sugar
  • 3 large eggs (room temperature)
  • Fresh herbs (dill or oregano) – optional

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs and melted butter until moistened. Press into the bottom of a springform pan.
  2. Beat cream cheese and feta in another bowl until smooth. Gradually add sugar, mixing well. Add eggs one at a time until blended.
  3. Pour batter over the crust and bake for 45-50 minutes or until edges are set and center jiggles slightly.
  4. Cool at room temperature before refrigerating for at least 4 hours or overnight.
  5. Remove from springform pan, slice into wedges, and serve.
