- 2 lbs sweet potatoes, peeled and sliced into 1/8-inch rounds
- 1 cup heavy cream
- 4 cloves garlic, minced
- 1 tsp fresh thyme (or ½ tsp dried thyme)
- 1 tsp salt
- ½ tsp black pepper
- 2 cups sharp cheddar cheese, shredded
- 4 tbsp unsalted butter, cut into small pieces
Instructions
- Preheat your oven to 375°F (190°C). Grease a baking dish with butter.
- In a bowl, whisk together heavy cream, garlic, thyme, salt, and pepper.
- Layer half of the sweet potato slices in the prepared dish. Pour half of the creamy mixture over them. Repeat with remaining potatoes and cream.
- Top with shredded cheddar cheese and scatter butter pieces on top.
- Cover with foil and bake for 45 minutes until tender. Remove foil and bake for an additional 15 minutes until bubbly and golden.
