  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 tsp vanilla extract
  • 1 cup maple syrup
  • ½ cup brown sugar
  • ½ cup chopped walnuts or raisins (optional)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs with melted butter and press into the bottom of a 9-inch springform pan.
  3. Beat cream cheese until smooth. Gradually add sugar, mixing well.
  4. Add eggs one at a time, blending after each addition.
  5. Fold in sour cream and vanilla extract until combined.
  6. In another bowl, mix maple syrup, brown sugar, and nuts or raisins. Pour over the cheesecake mixture.
  7. Bake for 60-70 minutes until edges are set but center jiggles slightly.
  8. Cool at room temperature before refrigerating for at least four hours (preferably overnight).
  9. Slice and serve with whipped cream or extra nuts if desired.
