  • 1 ½ tsp baking powder

  • 2 large eggs
  • 1 cup buttermilk (or milk + 1 tbsp vinegar)
  • ½ cup unsalted butter (melted)
  • 1 tsp pure vanilla extract
  • 1 cup dark chocolate chips (for filling)
  • Chocolate crumbs (optional for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans and dust with cocoa powder.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, and baking soda.
  3. Make a well in the dry ingredients; add eggs, buttermilk, melted butter, and vanilla. Mix until just combined.
  4. Divide batter between pans and bake for 30-35 minutes until a toothpick comes out clean. Cool for 10 minutes before transferring to wire racks.
  5. For the filling, melt dark chocolate chips and mix with prepared instant pudding until thickened.
  6. Assemble the cake by layering one cake on a serving plate, spreading half of the pudding filling on top, adding the second layer, then topping with remaining filling and optional chocolate crumbs.
