  • 16 oz cream cheese (softened)
  • 1 cup granulated sugar
  • 3 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 2 cups black cherries (pitted and chopped)
  • ½ cup powdered sugar (for topping)
  • Whipped cream (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper.
  2. In a bowl, mix graham cracker crumbs with melted butter until combined. Press firmly into the bottom of the prepared pan to form a crust.
  3. In a large mixing bowl, beat softened cream cheese and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Gently fold in the chopped black cherries.
  5. Pour the cheesecake mixture over the crust and bake for about 30-35 minutes until set but slightly jiggly in the center.
