  • 4 cups cauliflower florets (about 1 medium head)
  • 4 large eggs
  • 1 cup sharp cheddar cheese, shredded
  • 2 cups fresh spinach
  • 1 medium onion, chopped
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C) and spray a 9×13-inch baking dish with nonstick cooking spray.
  2. Steam cauliflower florets for 5-7 minutes until tender but firm.
  3. In a skillet over medium heat, sauté chopped onions in olive oil until translucent (3-4 minutes). Add spinach and cook until wilted (about 2 minutes).
  4. In a large bowl, combine steamed cauliflower, sautéed onions, spinach, beaten eggs, cheddar cheese, garlic powder, salt, and pepper; mix well.
  5. Pour the mixture into the prepared baking dish and spread evenly. Bake for 25-30 minutes or until golden brown on top.
