  • 1 can (28 oz) fire-roasted tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 large sweet onion, diced
  • 4 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 4 cups low-sodium beef broth
  • 1 cup bell peppers (any color), diced
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions and bell peppers; sauté until onions are translucent.
  2. Add stew meat to the pot and brown on all sides.
  3. Stir in minced garlic, chili powder, and cumin; cook until fragrant.
  4. Pour in canned tomatoes (with juice) and beef broth; scrape any bits from the bottom of the pot.
  5. Add kidney beans, bring to a simmer, cover partially, and cook for at least 45 minutes.
  6. Taste and adjust seasoning before serving.
