- 2–3 lbs Beef Chuck Roast
- 1 lb Fresh Mushrooms (Cremini or Button)
- 3 Carrots (thickly sliced)
- 2 Yellow Onions (diced)
- 4 Garlic Cloves (minced)
- 4 cups Low-Sodium Beef Broth
- 1 cup Dry Red Wine
- 2 tsp Dried Thyme
- 2 Bay Leaves
- 4 Yukon Gold Potatoes (cubed)
- Salt and Pepper to taste
Instructions
- 1. Chop the vegetables: dice onions, slice carrots, and quarter mushrooms.
- 2. Heat oil in a large pot over medium-high heat. Brown seasoned beef chunks in batches for about 6-8 minutes per batch.
- 3. Remove the beef and add onions and garlic to the pot. Sauté until softened.
- 4. Return the seared beef to the pot. Add carrots, mushrooms, potatoes, dried herbs, soy sauce, red wine, and broth. Stir well.
- 5. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours until meat is fork-tender.
- 6. Taste and adjust seasoning with salt and pepper before serving hot.
