  • 23 lbs Beef Chuck Roast
  • 1 lb Fresh Mushrooms (Cremini or Button)
  • 3 Carrots (thickly sliced)
  • 2 Yellow Onions (diced)
  • 4 Garlic Cloves (minced)
  • 4 cups Low-Sodium Beef Broth
  • 1 cup Dry Red Wine
  • 2 tsp Dried Thyme
  • 2 Bay Leaves
  • 4 Yukon Gold Potatoes (cubed)
  • Salt and Pepper to taste

Instructions

  1. 1. Chop the vegetables: dice onions, slice carrots, and quarter mushrooms.
  2. 2. Heat oil in a large pot over medium-high heat. Brown seasoned beef chunks in batches for about 6-8 minutes per batch.
  3. 3. Remove the beef and add onions and garlic to the pot. Sauté until softened.
  4. 4. Return the seared beef to the pot. Add carrots, mushrooms, potatoes, dried herbs, soy sauce, red wine, and broth. Stir well.
  5. 5. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours until meat is fork-tender.
  6. 6. Taste and adjust seasoning with salt and pepper before serving hot.
