  • 8 oz penne pasta
  • 1 lb boneless, skinless chicken breast
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large sweet onion, sliced
  • 2 tbsp fajita seasoning
  • 2 tbsp olive oil
  • Juice of 1 lime
  • ¼ cup fresh cilantro, chopped
  • ¼ cup crumbled feta or cotija cheese (optional)

Instructions

  1. Slice the chicken into strips and chop the bell peppers and onion.
  2. In a bowl, combine chicken strips, bell peppers, onions, olive oil, and fajita seasoning; marinate for 20 minutes.
  3. Boil water in a large pot; add salt and cook pasta until al dente (about 8-10 minutes).
  4. Preheat grill or grill pan over medium-high heat; grill marinated chicken and vegetables for about 5-7 minutes per side until charred.
  5. In a large bowl, mix drained pasta with grilled ingredients; drizzle lime juice and sprinkle cilantro on top. Toss gently.
  6. Serve warm topped with cheese if desired.
