Instructions
- Slice the beef tenderloin into thin strips. Heat olive oil in a large skillet over medium-high heat. Sear the beef in batches for 2-3 minutes until browned but not fully cooked. Remove and set aside.
- In the same skillet, melt butter, then add chopped onions and minced garlic. Sauté until soft and fragrant.
- Add sliced mushrooms and cook until golden brown, allowing them to absorb flavors.
- Pour in heavy cream and beef broth, scraping up any bits from the pan. Stir in Dijon mustard and simmer for 5-7 minutes until slightly thickened.
- Return the seared beef to the skillet, cooking briefly until heated through. Garnish with fresh parsley.
- Serve over egg noodles, mashed potatoes, or rice to soak up the decadent sauce.
